Midway Welcomes New Airport Dining Concept
Sarfatty Associates recently completed a new concept in contemporary airport dining at Midway International Airport for Midway Airport Concession. The first of its kind in airport dining, Sprigs is a fresh, contemporary, salad concept that offers customers a variety of healthy choices. The Sprigs Concourse B location at Midway was built with sustainable design elements including bamboo.
"We are constantly looking for ways to enhance Chicago's airports by providing new and exciting dining and retail options for travelers," said Commissioner Rosemarie S. Andolino. "This new business not only adds more flavor and healthy choices to our concessions program, it also creates new job opportunities."
The CDA's internationally recognized green airport initiatives continue to expand into all of the functions of Chicago's airports - including concessions. All new airport restaurants and shops must be designed and built in accordance with the guidelines of the CDA Sustainable Airport Manual. The restaurants at O'Hare and Midway are also incorporating sustainability into their everyday operations by recycling materials such as cooking oils and packaging, and utilizing energy efficient equipment.
Sarfatty Associates had previously completed Lalo's, Reilly's Daughter, Miller Pub, Pegasus and other retail/food service projects at Midway International Airport.
